For ales, if primary is mostly complete in 4 or 5 days, do temps still need to be to be controlled, or is it ok after primary is complete? FOr instance: if I ferment in my mini fridge at 65ish for 5 days and then put it out at room temp (usually about 70 deg) until I decide to keg, will the yeast cake create off flavors or esters, or does that usually occur in those first few days while fermentation is going hot n heavy?
