Doing an AHS extract kit with specialty grains the instructions say get water to 155 the remove from heat and put grains in for 25 minutes. That implies no more heat till i remove grains and add extract and water for full boil. Is this correct no heat source for the 25 minute steep?
 
that is just one way of doing it. they worst case scenario is to boil the grains, so if you are not keeping an eye on it, it is best to keep it off the heat. personally, with extracts, i keep the water at around 160 for ~30 minutes, or if i am lazy, put the grain bag in the cold water, and take it out when the water hits 175.
