Extract Hop Slam Clone- critiques

Hey guys,

I'm trying to gather a recipe for Bell's Hop Slam, and I've found the following 2. One main question is whether or not I can substitute for the malt? The first recipe calls for Alexander, which appears to be canned LME. Is there a different malt I can use that isn't canned? I've heard canned LME isn't as fresh. Otherwise, what do you guys think?

Edit: If anything, people searching can come to this post, I've seen a LOT of these, with no real answers.

RECIPE 1

My recipe (extract - my last extract beer ever now that I am AG'ing) is as follows:
8 lbs Alexander Pale LME
3 lbs Honey
8 oz Malto Dextrin
.5 lb Caravienne
.25 lb Crystal 40L
.25 lb Carapils
1 oz Centennial at 60 mins (9.1AA)
.5 oz Simcoe at 20 mins (11.9AA)
1.25 oz Centennial at 20
1.5 oz Simcoe at 5
.25 oz of Centennial at 5
Honey added at flameout
1 L starter of 1056

ETA: Dry-hopped with 1 oz of Simcoe leaf (13.0 AA) and 1 oz of Amarillo (?? AA)

1lb - aromatic
.5lb - carapils
boil
3lb - corn sugar
6.5lb - xtra pale ale extract
2lb - munich extract
hops
75min - 2oz simcoe
60min - 1oz glacier
20min - 2oz centennial
15min - 1oz glacier
10min - 1oz vanguard
2min - 1oz crystal & 1oz hallertau
dryhop - 2oz simcoe
double pitch WL california ale 001
OG: 1.089 - FG: 1.020
 
I know this thread is almost a year old, but I'm curious to know if anyone has an opinion about it. I'm looking for an extract clone of Hopslam.
