Last halloween I made apfelwein and have been very pleased with it all year, and I was going to make more this year. However, I was just at costco and got 5lbs of clover honey and 4 gallons of tree top apple juice...see where I'm going with this? I'm going to add the 5lbs of honey to the apple juice and either pitch 1116 or nottinghams, haven't decided yet.

What are peoples thoughts on this mixture?
 
I would call this a cyser. It's something people have been making for ages, and is basically a cross between mead and cider.
