Dead simple and quick.

Cut onions in half and slice. Place in a large bowl and squeeze the life out of them. You need to crush them so they release loads of liquid and become quite wet.
Add turmeric, chilli and what ever spices you fancy. I like cumin in there along with cardamom and mustard seed. I the add fresh coriander leaves.
Finish with Gram Flour (Chick pea) to make a dryish batter. Just enough to keep the mixture together. I've never add to add any liquid. (every other recipe I see says add liquid. If you do I find you need more flour and you end up with a floury baji.

I deep fry at about 170°c until dark golden brown. I make my own Devils Chilli sauce from chills, garlic, sugar, lemon juice and vinegar.
Another easy sauce is yogurt with tandori masala mixed in.

They take less than 30 minutes prep to eating. I make them to take when visiting friends. Because they are so cheap, easy and quick I can feed a crowd. There's never any left and they go before anything else.
I make them quite mild for those that don't like spicy but the dipping sauce blows your head off.
 
Orf, have you tried salting them slightly just after cutting to omit the squeezing step?

You may notice from any of my recipes, I use very little salt. Because I don't eat processed foods I'm not used to it, so I leave it out unless I need it.

I find the squeeze does the job and it's more controllable than salting.

Roger that. I understand cooking with little added salt. We don't eat processed foods either.
