This weekend I'll be brewing using dry yeast for the first time. I've only used liquid here to. I bought the yeast on my lunch break. I just realized that the yeast is sitting on my counter rather than in the fridge. So, how does dry yeast respond to being left out? How long does it have? Hours? Days? Weeks?
 
Don't leave it in the window of your car in July!

On your counter...it's fine. I'd say anyone that predicts the exact # of weeks, days, hours, minutes and Seconds is full of Poo!

You better get home and check the rest of your ingredients....The dollar for the yeast is nothing in comparison the malt and grains that may be improperly stowed.

But stop off at the beerstore on the way home for some good beers (I'm thinking Oaked Arrogant Bastard, and Something hoppy like two-hearted ale) and maybe pick up a pizza too. You don't wanna be bothered by mundane things like cooking dinner (and working for that matter) when you have serious matters to attend to like staring lovingly at your grain and fermenters...

I did 90mph through a school zone to get home. All ingredients are safe, but I found a keg in the fridge that was being neglected. I took care of it and all is well.

The pizza is on the way. In exchange for good free beer, my girlfriend takes care of dinner.
 
All of the dry yeast packets at the LHBSs I've been in are not refrigerated, they're just not that fragile. You're fine. They will last longer in the fridge if you decide to stock up though.
