Dry Yeast - One or two pouches?

I've learned brewing by reading Palmer's book. He recommends using 2 pouches of dry yeast. I'm trying to cut costs and I used only one Safbrew WB-06 for a wheat beer today. Am I looking for troubles or are you all using only one pouch?
 
When I use dry yeast I usually rehydrate it by adding 1 packet of yeast to about 4oz of water 95-100 degrees for 15 minutes. Make sure all containers are sterilized. Then pitch the yeast at the proper temperature.
 
Great thanks! The airlock is already bubbling so it should be fine. I guess the first fermentation will be longer tough.
