I picked up some of those true brew dried bitter orange peels and some true brew dried Lemmon peels , at what point should I add any of that to accent a hopefully citrusy imperial pale ale ? ... Same question for the canned chunked
pineapple ?
 
It's an imperial pale ale partial kit from brewers best .. I think the og was 1.070 but took it at 80 degrees
 
Use them if you want, but they have no place in an IPA.

Save them for a wheat or Saison.

Dunno about the pineapple, but experimenting is fun. I added some orange perl the last 10 minutes of boil, but that may be too early. I have read 5 minutes to flameout. Maybe try sanitizing in vodka & add it straight to fermenter. Have fun with it!
 
When I add bitter orange to a wit, I add it in the last 15 minutes of the boil. I've never used pineapple before. If i were adding pineapple i would rack your beer onto the pineapple chunks in secondary.
 
I wonder if the pineapple would break down the proteins in the beer. They break down meat proteins.

Citrus peel would be fine in your beer if you feel it needs that extra citrus note. I'd taste the beer first and see how it is.

The citrus flavors you are looking for would come from the correct hops in the appropriate quantities and at the appropriate times. Also from the yeast used. Do some searching for recipes for "citrus IPA" and you will get an idea of what ingredients to use.

That said, if you just what to throw fruit in there then check out wheat beer recipes for times and quantities.
