Do I need to thoroughly sanitize if I'm only running water and juice?

If I build a kegerator, do I need to stay on top of cleaning the equipment if the kegs are depleted on a 1-2 day basis? or will rinsing and regular soap be sufficient?

You are probably going to want to clean them between uses no matter how frequently you are draining them. I'd probably stick with a quick oxyclean/hot water bath and rinse them out well between fills.
 
I would clean them between uses. Otherwise, you eventually will end up with a batch that got sour unintentionally.
 
I'd recomend cleaning them every time. I've occasionally just rinsed with water and reloaded, but you are risking it a little. Its takes a whole 5-10 minutes to do, and with the time you already have invested in making the beer, its a drop in the bucket.
 
I have a dedicated seltzer line. I cleaned and sanitized it once, but now I just keep adding new water to it when it gets low.

Anything else, I thoroughly clean.
