Guess my dear, sweet wife had enough with my supplies laying around so she put it all in the garage. It was likely 3-4 hours before I got home to find my yeast in the Houston heat. I went ahead and made my starter... No good. I brewed Sunday, brew shop is closed today. Will my wort be okay if I can't pitch until tomorrow? I plan to buy 2 smack packs.
 
So 3 days of un-pitched wort? Might be sketchy, but what else can you do, its worth a shot. If it were me I would put the fermenter in a chest freezer so its not ambient temp wort. Probably won't be the best beer in the world, but you can blame your wife for that one!
 
I've done it. 8 days on my Oktoberfest. As long as you're VERY GOOD at sanitation, you won't have an issue.
