So, I found an older winemaking kit my parents had laying around their house, but the wine yeast and various other additives were missing. I decided to take the juice (a blend of grape, cherry and blackberry) and pitch some Trappist Ale yeast. Fermentation took off for a few days and has since slowed it's pace.
I don't really have much questions other than, what the hell will this taste like? Should I let it sit in the primary for a couple more weeks, then pitch some sort of Brett/lacto yeast and just let it go or what? Not overly concerned, but if there's some way to make this actually taste decent, I'm willing to give it a try.
