Does anyone know a good off the shelf beer that you can culture brett from? I have access to things like anchorage brewing company and a ton of different belgium breweries. I made a saison a little while back and used the WYEAST Belgian saison strain but wanted to add a little brett funk to it. Thanks for the help
 
Rayon Vert Belgian-Style Pale Ale
Bottle conditioning with fresh ale yeast and Brettanomyces finishes the beer, adding a delightful effervescence, dryness and continuously evolving character.
 
Thanks for the info! I believe my store just got a new batch of rayon vert so I'll try making a starter this weekend
 
No worries. I found a thread where someone cultured brett from a bottle of rayon vert. There's also plenty of info on orval so I may go with that. Thanks for the help though
 
Just keep in mind that brett does not grow as quickly as ale strains and needs a more acidic environment. Adding plain white vinegar to get the ph down to around 4 will help the starter take off quicker but still expect it to take a few extra days.
