Really cool idea... I'm assuming there won't be a boil and of course no mash since you're converting the starches yourself. I don't know if this comes into play or not but I would worry about tannin extraction from the bark, since it can be really toxic if you get enough of it at once.

What species of tree you thinking about trying?
The cambium layer of the tree does not contain anywhere near as many tannins as the outside layer of bark. Its the inner soft white bark that peels off the tree. Theres even a noodles recipe for it. Of course if you want to be on the safe side, you could always soak the bark in water for a few days to leech the tannins out!
