Personally, a little 6 row would be my preferred choice for amylase. More controlled. If sitting around chewing bark and spitting it into a bottle is something you want to do, then go for it I guess.
 
Really cool idea... I'm assuming there won't be a boil and of course no mash since you're converting the starches yourself. I don't know if this comes into play or not but I would worry about tannin extraction from the bark, since it can be really toxic if you get enough of it at once.

The cambium layer of the tree does not contain anywhere near as many tannins as the outside layer of bark. Its the inner soft white bark that peels off the tree. Theres even a noodles recipe for it :D. Of course if you want to be on the safe side, you could always soak the bark in water for a few days to leech the tannins out!
 
You know what guys, call me crazy but im going to try it! I will post results if it starts producing CO2. I will use nothing but chewed up pine bark, water, and a little bit of my champagne yeast.

What species of tree you thinking about trying?

He said pine, but as there are (IIRC) 12 or so different types of pine in the US alone I am also interested in which type if this works out. Always interested in unusual ingredients.

Good to know! Any idea what you're going to use for bittering? Maybe a couple spruce tips or something? :)
