Is there any real problem with taking a cold-crashed starter out of the fridge and letting it set at room temperature for a couple of days before using it? Mine is in an erlenmeyer flask with tin foil cover. I aborted my brew session but forgot to put the starter back in the fridge. For that matter, what is going to happen to it over time at room temperature? Does the possibility of infection increase or does it just die a slow death?
Thanks.

As long as everything was sanitary there should be no problem. If it is going to be longer than a week until you use it I would suggest another small starter addition.

Think of a 5-gallon batch that sits in a carboy for two to four weeks at room temperature as a giant starter. So no big deal with your starter sitting out for a couple of days...
