Have an upcoming brew and I'm doing my best at recreating Last Snow (using a recipe I found on here actually, as well as some other advice). I'm going to use toasted coconut in the secondary, as well as a coconut extract in the boil. A couple things I haven't been able to pinpoint...

1) Does anyone have a recommendation on a coconut extract to use?
2) How much extract should be used and at what point in the boil?
3) Assuming using fresh coconut and toasting it (for the secondary) is best. Any advice on the toasting?

Appreciate any advice.

For toasting I did 350* on a cookie sheet for about 5-7 mins checking constantly for a golden brown color.
 
I can't help on the extract, but can offer some advice on the toasting.

When i make my coco brown ale I use toasted coconut in the secondary. I lay out the coconut on a baking sheet so that it is as close to a single layer as possible. Then place in the oven at 350. I like to turn it every few minutes to make sure it browns evenly. then just keep an eye on it and when it starts to brown you should be good to go. I think i toasted it for 10-15 minutes, but I do not have my notes with me at work.
