One of my next brews is going to be a chocolate/vanilla stout and I like to use local ingredients where I can. I found a local chocolatier but the closing thing they have to pure cocoa nibs, is what they call a "cocoa mulch tea." Its pretty much cocoa nibs, cane sugar, milk powder, and paprika. I was thinking of making tincture to dump into my secondary.
Should I sift out as much as I can of this mulch tea or throw it all in my tincture and strain it before I throw it in, or just throw it all in and see what happens? I'm mainly concerned what the milk powder will do the consistency and clarity of the beer.
