Citra IPA went wild

I was transferring my all Citra IPA to keg today and noticed it looked funky on top. Used S-05, which I use often, and know that it normally does not look like it did today. Smelled it, and it smelled sour!!:ban: So I got it into keg and am carbing it up now. Not sure how the wild beasties got in, but here is to hoping it is not only drinkable, but enjoyable as well.
 
Out of curiosity, what was your calculated IBU? Always hear that the bugs don't like high IBU beers.

Also, have you made sours before? Is it possible that the bugs are something you're familiar with or is it something wild?

Lacto and some other similar "bugs" dont like IBU's. Wild yeast could care less, some even proliferate at a lower pH.
That being said, I had an amber that went wild. It was amazing!!
 
I can't recall the exact IBU's but I know it was in the 50's. I have not made sours before, but always wanted to try. I have a fear of contaminating my gear and then only making sours ever again. This of course would not the end of the world, but not something I wanted to risk just yet. Who knows, I may have jumped that hurdle now.
 
I had something similar happen a couple of brews back. I left a yeast starter on the stir plate for well over a week as I had a business trip and forgot about it. Pitched it and then smelled it...WRONG order! Anyhow, it smelled sour so I quickly brewed another batch and let this one ferment. Just kicked last week...it was quite good! Pretty sure it was either from extended time on the stir plate or I did not clean the flask well enough AND let it spin too long. Either way, glad I went ahead and fermented it because it was quite pleasant with the mild sourness and the hoppy aroma. Hope yours turns out at least as good!
