Cinnamon sticks in a hydromel

I made a 1 gallon apple hydromel with an abv of 7.5%, with the intention of force carbonating it when it’s finished. Right now I have it in secondary. About 11 days ago I added 8 apples that I cut into 8ths and also 2 whole cinnamon sticks(1 Ceylon and 1 cassia), I’ve been agitating it at least twice a day but the cinnamon flavor is still very subtle…I was hoping I could get some feed back about how long I should expect to leave the sticks in before I really start to taste the cinnamon flavor
 
Welcome to HBT! When I use cinnamon, I make a tincture by breaking it up and soaking it in vodka for a few weeks to extract flavor and aroma and kill off any nasties that might be on it. I then at packaging time add a little of the tincture at a time until I get what I like. Gives more control so you don't over or under do it. Good luck!

Great idea!
I put a fat stick of Cinnamon in a gallon batch of Cider, couldn't taste it at all.
