Christmas Ale Extract Recipe

Hey Guys,


It is getting close to time to brew a Christmas Ale. I found an old extract recipe on here from 3 Creepio...I updated it according to some of the replies:


9.9.lbs. Amber LME, late additions (1/3 at 60, 2/3 at 10)
1 lb. Chocolate Malt, steeped at 150 degrees 30 mins.
1 lb. Crystal 40 Malt, steeped at 150 30 mins.
1 oz. Columbus Hops at 60 mins.
1 oz. Columbus Hops at 30 mins.
2 oz. Simcoe Hops at 15 mins.
2 oz. Simcoe Hops at flameout.


Spice Bill (all added at 10 mins.)
1 lb. clover honey
1/2 tsp. ginger
1/2 tsp. cinnamon
1/2 tsp. allspice
3 bourbon vanilla beans, split
3 clementine peels (discarded at flameout)


Wyeast American Ale 1056, 2-step starter (approx: 370B cells)


OG: 1.082 Target FG: 1.021 ABV approx: 8.01% IBU approx: 55.73





I wondered if anyone has tried this? What do you guys think about it? And would anyone happen to have any other good Christmas Ale recipes?

So I realize no one responded to this post however I figured I would update with the results.

This thing blows your top off. Took prepitch samples and post secondary samples. It smells amazing, is very balanced, and has the perfect Christmas flavor.

But overpitch and watch out cause that lid is going to blow!

BTW I used 5 packs of mulling spices instead of clementine, ginger, and cinnamon. Used 1oz of vanilla split scraped and all thrown in, 12oz of raw honey, and 1/2tsp of Allspice.
