This usually turns out pretty good, until today.

Thought That purple pack of yeast in the fridge was S-04. Nope, WB-06. Only other things I had were a Danstar Belle Saison and a Mangrove Jack Wheat Beer yeast.

Might turn out interesting.

Bavarian Wheat Stout, BIAB, 1.25 hour mash.
3 gallons

3 lbs. Maris Otter
3 lbs. White wheat malt
1 oz. Chocolate malt 350L
12 oz. Roast Barley
6 oz. Molasses
0.6 oz. Centennial @ 60 min.


WB-06 Wheat beer yeast

S-04 is Blue isn't it? But for the Wheat Stout wouldn't a Wheat yeast be good maybe even better?

I think you made the right choice, or maybe the MJ. I would have used one of these just for a change.

Yeah, after looking online I saw the S-04 is in fact blue.

May be I just need to brew more. Think I did two batches last year. Three this year so far including today. Trying to do one a month 2.5 to 3 gallon.

I try my best to keep a running list of my inventory (base malts, adjuncts, hops, yeast and supplies) so I can build a recipe without having to physically look for each ingredient. I sometimes forget to update it but have gotten much better about that recently. I actually do a visual inspection once every month or so also.

Sometimes I am surprised about how much I have acquired over time. Currently I have more than 100# of base grains and 7# of hops... Holy crizzap, how did I let this hobby suck me in?? Oh, yeah... Delicious beer.

This. Especially the sucking me in part, but more to the helpful side, the thing about checking once a month because in the rush I forget to decrement inventory.

To @dwhite60 , I use WB06 for a lemon/lime wheat and like it because it is not too phenolic, to me means clove/peppery, as I despise clove in beer for some reason. I've not used the MJ wheat so can't help ya there.
 
48 hours and this seems to be done. I even kept it in the mid to low 60's Fahrenheit. WB-06 seems to be one strong fermenter! Interested to see where the gravity ends up.
