Can't get beer to force carb. Still taste flat.

I transferred my beer into a corny last night and sat it in my fridge. It sat over night to get cold. This morning a attached c02 to it rolled it on it side and shook it for 1 to 2 mins let the co2 sit for about 30 mins to 1 hour. Purged the co2 out pumped in about 5-10 psi to serve and it still taste flat. Btw it's a wheat beer
 
30 minutes to a hour sounds quick to me. I give my keg a full 24hrs at 30psi with no rolling or shaking and it's drinkable at that point but maybe not fully carbed even.
 
I've never done the shake method, but I think it takes more than 1-2 mins. I could be wrong!? A better option would have been to do 30psi over the night you were chilling it, purge, and set to serving pressure
 
Yeah it takes more than 1-2 mins at 30 psi even with shaking. I usually set to 30 psi for 24 hours and don't shake. At that point it will be mostly but not completely carb'd. Then dial down to serving pressure. After a couple more days it's usually where I want it.

You can speed it up by shaking it but you do run the risk of over-carbonating.

So I pumped it up to 35 psi yesterday and shook it agaun for 4 mins disconnect air and let it sit for 24 hours. Purged it and even after about 3 hours and putting it at 5 psi its all foam! I cant even test to see if its flat cause its all foam. I'm fed up and am about to get rid of the beer!:(
 
Maybe try not to hurry the process so much. Force carb'ing already cuts at least a week of waiting off and IME, that's a week less of the beer ageing and clearing.

Could be over carbonated, or your system isn't balanced. Maybe both. How long is your beer line from keg to tap?
 
When burst carbing, there is a monumental difference between one and two minutes. Hell, the difference between two minutes and two minutes fifteen seconds are big. Take the keg out of the fridge, let it warm up to room temperature, then do the shake and purge. Give it a couple shakes then relieve the pressure (no gas hooked up...duh). Let is sit for a while then do it again. This will flatten the beer and you can try again. If you insist on burst carbing, you have to know time, temp, and volume. The longer you shake, the more it will carb. The colder it is, the faster it will carb. The more head-space you have, the faster it will carb. The faster you shake, the faster it will carb.

Hence the comment about risking over carb.

If you need to de-carb, put the gas in line on a liquid QD and attach to the liquid out post. Crack the PRV and bubble CO2 up through the beer at 1-2 psi.

Then set it to the serving pressure and wait a few days for it to carb properly.
