I was originally planning to make a Kolsch, so I have a Wyeast Kolsch 2565 in hand. But I also have about 4oz of Northern Brewer Hops in my freezer that have been there for almost a year now and I want to use them up.

So I was thinking if the Kolsch yeast would work for a California Commons (use up most of the NB hops), then recycle the yeast (either re-pitch or collect the yeast for later use) for Kolsch later.

Anyone done this before or have any comments on how it might turn out?

On a related note, I was wondering how Willamette hops might do as a aroma in this beer style? Has anyone experimented?

I have made Death's Vienna/NB SMaSH a few times, and 2 batches ago I used both 2565 and 2112 in a split 10 gal batch. I liked the 2565, but I felt as though the yeast complemented the beer better in the batch fermented with 2112. Just my opinion.

As an aside, the current 10 gal batch is split with 2112 and Pacman so I'm interested to see how it turns out.
