Brewed my 2nd batch (BB Holiday Ale) on Nov 1st; OG was 1.07, using 2x 3 gal Carboys. Bubbling stopped in the 4-6 day range. I will not be doing a secondary.

Wondering: When should I Bottle, and for how long?
 
Your hydrometer tells you when it is safe to bottle. Take a couple hydrometer samples a couple days apart and note the readings. If they are exactly the same, the ferment is complete and you can bottle. Since this is a higher alcohol beer it may take a bit longer in the bottle to mature into the best flavor. I'd wait at least 3 weeks to sample and then only sample one. Wait another week if you can and sample the next one. I think you will find an improvement in the flavor and it will likely continue to improve for another month. Eventually the spice flavors will begin to fade and that would be your cue to drink up any of it that is left (if there is any left).
