Brett Development

Hi All,

I was wondering if anyone had any info or experience on bulk aging brett beers vs aging them in their bottles. For the most part I tend to leave a brett beer in the secondary for at least 3 months before bottling them up, but I've also heard of folks bottling after two weeks and then letting the brett develope that way. Any thought? Thanks!

One of the more obvious ones is the concern for gushers if bottled too early, but I assume you are looking for more character differences than just that.
