I was wondering if anyone had any info or experience on bulk aging brett beers vs aging them in their bottles. For the most part I tend to leave a brett beer in the secondary for at least 3 months before bottling them up, but I've also heard of folks bottling after two weeks and then letting the brett develope that way. Any thought? Thanks!
