I'm getting ready to bottle a clone of Tank 7, Boulevard's saison, and had a couple of questions about bottling with Brett. Recipe was for 3.5 gallons: 70% Pils, 20% flaked maize, 10% white wheat, OG = 1.073, FG = 1.002, single infusion at 148F, fermented with Belle Saison, starting at 64F and stepping up 3-4 degrees a day to 82F.
First off, would adding the dregs of a 750ml of Saison Brett (Boulevard bottles with the Brett dregs) actually do anything for this beer? I know that Brett will ferment sugars that sacc won't, but would it still give me some more funk in a beer this dry?
If so, how much Brett do I need to add? If I primed and bottled most of the beer normally, but added the Saison Brett dregs to the last gallon and gently swirled to stir it in, would that work?
