I soaked some oak cubes in bourbon 1.5 yrs ago and ended up with some leftover bourbon. The cubes sat in it for probably couple a months. I assume I could just use this for my next bourbon barrel aged whatever????
 
If I don't dump the whiskey along with the oak into the brew, I drink it. Never met a bourbon that didn't improve with some oak.
 
I have had some VERY potent bourbon that I couldn't drink after oak cubes soaked in it for two weeks. I didn't like the flavor. It was way too harsh. So, I dumped the bourbon and soaked the cubes again. Some people do this to get rid of the harsh flavors that are present first. I think that after a couple of weeks you get to the more subtle flavors.
