I have a 3G batch of saison I'll be bottling soon. I added organic orange zest in the last 5min of the boil, but after three weeks fermentation it's indiscernible.

I thought maybe I could put the zest of one organic orange into like 4oz of vodka and let it sit for a week, then pour the infused liquor (not the zest) into the bottling bucket.

Anyone done this?

I'm concerned the vodka won't disinfect like i think it will and turn my saison to swill, or conversely that the zest won't be enough to impart flavor.

Just dump zest in secondary and let it sit for a week. I do this with pretty much anything. Even bacon the risk of infection is pretty minimal at least in my opinion ive done this with an orange lager I brew a few times a year.
