Boil done, can i pitch yeast tomorrow?

Hello, first post. I started my boil only to find afterwards that my hydrometer got broken since my last batch. Ouch. In can buy a new hydrometer tomorrow. Can I seal up the batch in my primary fermenter tonight and pitch the yeast tomorrow once ive confirmed my starting gravity? This is my second batch. Thanks ahead of time.

Pitch as soon as your temp is below 80 deg F. Waiting until tomorrow gives every wild yeast and Lactobacillus on Earth a great breeding ground in your fresh wort.

Simple answer, Yes cover and put airlock on to protect it...BUT
You can pitch now if you have the temp right. If it is an extract batch the volume is correct and you didnt forget anything then your gravity should be right where the kit said it would be.

If this is an extract brew then I wouldn't worry about taking a reading. If your volumes were all correct then the calculated gravity will also be correct. If this is an all grain brew then it's up to you whether you want to take a reading or not. With that said, sure, you can pitch tomorrow as long as your sanitation is spot on. Search "no chill" on this site. There's plenty of people who do it but I believe it usually involves transfering boiling wort straight into a container and sealing it up.

I know all the instructions say pitch when you get below 80, but you should really wait till you get down to optimum fermenting temp for your yeast.
