I have made a try brewing a Bière Brut. With approx 65% pilsner, 25% wheat malt and 10% sugar.
It had an OG of 1.108 and I used a WLP545, Belgian Strong Ale in the primary.
Now after 10 days it is at 1.054. According to the recipe I had as a guideline I would today rack it to secondary and add champagne yeast.
Should I follow the recipe or should I wait until the WLP545 have decided that it is finished?
