I love a good pale ale, well balanced and just a delicious summer drink. Everyone seems to always be talking IPA's and I love them as much as the next hophead but theirs something about a well balanced pale ale that I love! So what's your favorite PA that you have brewed? I recently did Yoopers pale ale on here and loved it!

I just did an American Pale Ale, but I brewed it with more "herbally" hops. It's my favorite brew yet, though admittedly only fifth overall and first All-Grain BIAB batch.

I used 8.5 lb American Pale Ale Malt (2-row, I guess) and .5lb Victory Malt for a bit of malt character. I did use some old Simcoe I had for bittering, but I used German Tradition + Sterling for flavor/aroma and dryhopped with Nugget.

The extremely herbal hop character in an APA is a nice break from the usual citrus/pine profiles, which I still love.

Yeah, I did a pale ale before that used perle & sterling instead of the usual "C" hops. It was a nice change. I think a combo like NZ hops with sterling would be good for a spicy tropical fruit sort of thing for warm weather as well.

My go to recipe is 90% 2row, 5% crystal 40/60, and 5% wheat. Hop to 35ish IBUs with additions at 60, 20, and 5 minutes. Mash at 154 or so and use whatever hops you want. I brew this guy 4 to 5 times a year.

I do a 50/50 2 Row/white wheat pale... one FWH addition for bittering and a big hopstand/dry hop for flavor. I target 6.5% and 50 ibu for my session pales.

I have been playing around with some pale ales that I want to nail down as a "House" pale ale.

6.5 gallons post boil volume
92% 2Row, 2% each of wheat, flaked oats, honey malt, cara20
1.055 gravity

Hops -
60 minute = 1 ounce Warrior
15 minute = 1 ounce
5 minute = 3 ounce
Flameout/Hopstand 30-40 minutes = 4-6 ounces
No Dry Hop (Trying to use the hopstand and eliminate this step for convenience and turning the beer around faster)

Hop Variations I have used with the 15-5-hopstand additions ( I have always used warrior for bittering these):
*All Citra
*1/3 each Citra/Centennial/Cascade at each addition
*1/3 Citra/Cent/Cas at 15 and 5, but then 2 ounces of citra and 1 ounce of Centennial, cascade, comet and ahtanum in the hopstand

yeast = been using conan..... but 1056/001 or other favorite pale ale yeasts would work great too I am sure.

Been really happy with these latest versions. Brewday to Glass is about 12-14 days.
