Please share your thoughts on hopping an American IPA to about 75 IBU's? Targeting SRM = 9, and ABV = 7% to 7.25%. Shooting for 5.5 to 5.75 gallons in the fermenter. Need hop ideas.

PS: I was giving Millennium pellets consideration as the bittering hop. Would this be a good choice? Is it even generally available?

Magnum for bittering (if desired) and Galaxy, Amarillo and Mosaic for aroma. I recently made a 60 IBU IPA with even amounts of Galaxy, Amarillo and Mosaic for aroma and dry hopping and it was wonderful. Reminded me of Juicy Fruit.

Magnum for bittering and Citra, Amarillo and Mosaic for aroma.

The best IPA i do is Magnum for bittering and then Citra/Mosaic at 10 min and then at flameout.

But go easy on the Citra because it can take over.

I did the following hop bill for an imperial IPA (or double IPA) and the brew club loved how it turned out. Even the head brewer at the brewery we meet at for our meetings asked if I could bottle two bombers for him to have over the holidays.

1.00 oz Bravo [10.50 %] - Boil 60.0 min 25.9 IBUs
1.00 oz Citra [12.00 %] - Boil 20.0 min 17.9 IBUs
1.00 oz Amarillo [9.20 %] - Boil 10.0 min 8.2 IBUs
2.00 oz Falconer's Flight [9.00 %] - Steep/Whirlpool 15.0 min 11.0 IBUs
1.00 oz Amarillo [9.20 %] - Steep/Whirlpool 15.0 min 5.6 IBUs
1.00 oz Citra [12.00 %] - Steep/Whirlpool 15.0 min 7.3 IBUs
1.00 oz Amarillo [9.20 %] - Dry Hop 4.0 Days 0.0 IBUs
1.00 oz Bravo [10.50 %] - Dry Hop 4.0 Days 0.0 IBUs
1.00 oz Citra [12.00 %] - Dry Hop 4.0 Days 0.0 IBUs
1.00 oz Falconer's Flight [9.00 %] - Dry Hop 4.0 Days 0.0 IBUs

About 76.1 IBUs total.

Can dry hopping be accomplished successfully with pellet hops, or must it be done with leaf hops? My local supply house doesn't carry much leaf. I'd like to dry hop with Columbus, but I can only get it locally in pellet form.

You can do either or it doesn't matter. If anything I think it's personal preference. I feel like whole leaf hops may absorb more than pellets but I could be wrong. I prefer pellets in the boil b/c they don't clog my drain valve like leafs do.

Also pellet hops take up less room in my freezer. [emoji6] Maybe that's why I have 12.5 pounds of hops in there.

I've been hooked on late addition and dry hopped Mosaic lately. I have mixed with other hops depending on the grain bill, but really I love them more by themselves. In my favorites I use other hops for bittering, but all the late additions are mosaic. To my nose, they taste like they smell more than any other hop variety I have used and really just give an amazing citrus/grapefruit/lemon aroma and flavor with a couple ounces at flameout and a couple more in the keg. I've also been buying all the commercial Mosaic IPAs I can get my hands on, so maybe I'm just addicted to them and my opinion should be taken lightly, haha.
