5 gal recipe

3lbs Belgian pilsner malt
2lbs belgian wheat
3lbs Breiss pilsen DME
1/2lb Sucrose

1oz willamette @ 60min
.5 oz willamette @10 min

WLP 530 Abbey ale yeast

OG: 1.057
IBU: 12.7


How does this sound? I was considering adding the DME late in the boil to keep the color light, but I'm not sure when or if I should even bother? Will the 1/2lb of sugar dry it out too much? Also, will this yeast be suitable to use for a bigger belgian later, say a quad?
 
The yeast is the Westmalle strain, which some say is the best Quad yeast there is. So, yes to that. :D Personally, I wouldn't bother with the late addition. Pilsen DME is pretty light stuff. I can't really answer about sugar at a low OG though. Interested myself.
 
anyone else? I don't want to mess this up with the sugar, but I want it more dry.
 
Alright, well I guess I'm going to get the ingredients for it tomorrow. We'll see how it turns out!
