Why does Rare Barrel make so many dark and red sours relative to others? Always seems like a waste to add fruit to ones that have other flavors that just swallow up everything else. Oude Tart w. Cherries for example is a total waste.

You know what I mean! When brett and bugs eat unfermentables, it throws off strong flavors that overwhelm the rest of the beer. I thought Oude Tart with Cherries was good, but the cherries didn't add much to the base beer.Lesson learned: dark beers have strong flavors and light beers have less flavor.
