Hi all!

What's the right carbonation level for a Barley wine? I was thinking 2.3 volumes...is it right?

Hi!

Do I need to repitch ? (it's about 10.5% and I used for the primary fermentation the fermentis s05...an entire packet for 14.8 liters)

No, you shouldn't need to re-pitch. I know a lot of people use that yeast for a month in the primary, 3 in the secondary, and then bottle without re-pitching, and although it takes a while to carb (longer than 3 weeks,) it will still carb.
