Apple Wine - will this work?

So, I'm trying to do a 1g test batch and i've got the beer at 1.05 range - which is where I'd like to keep it.

So, if I bottled it now are the bottles going to explode? Trying not to kill the yeast as I would like it carbonated.

Any other input would be great! Thanks

As I only have enough for about 7-8 bottles - I'll have to try that.

How about using my sodastream to carbonate them? I'm seeing some threads here and there about them... sounds like a GREAT time to try it!
