Well, you shouldn't worry, mostly because you'd be violating RDWHAHB protocol. But yeah, with anything you're bulk aging, you want to minimize headspace. If you don't have a carboy small enough, you can boil some glass marbles (sanitize them) to help take up some of that excess room without imparting any off flavors to your apfelwein.
