APEX San Diego...WTF?

Just wanted to add to this. Last week I pitched APEX San Diego onto a Wit beer that I've made many times with WLP001. My stash was out and my LHBS stopped carrying White Labs so figured I'd try it. Dry pitched onto 1.052 wort. It took like 36 hours to really take off but then went mad. It's been 6 days and according to my Ispendel it is already done. Obviously different then the OP's experience. Haven't tasted it yet though. Gonna give it the usual 2 weeks to rest as my kegerator is still full. Will update once I taste it.
Just wanted to update. Overall I’m happy with the yeast. It finished quickly at the FG I was expecting. I cold crashed for two days and it has come out fairly clear. Harvested a mason jar to try it again later. Only problem I had is the beer has some esters that I wasn’t wanting. Not bad at all, and honestly a good beer. Just this is a house beer I brew regularly and don’t try for esters. I think though I just fermented too warm. Did 68 degrees to start and let rise to 72 after couple days. I know this is on the warm side but I had done Cali in this beer at this temp before without the esters. So overall I am going to use it again, but will plan to ferment around 65 I think.

I just ran this yeast at 65°F. It was slow to start and still seemed to introduce some esters that I wasn't expecting. It also seems to have stalled with probably 40% of the sugar left.

The yeast claims to support a temperature range from 60°F to 75°F and up to 9% ABV, so it shouldn't have stopped at 5% after over two weeks in primary. (The beer should've come out at a hair under 9%.)

I was looking forward to this beer. I'm very disappointed.

That’s a bummer to hear. I wonder if it was the temp or the alcohol? Mine was just 5.8% with an OG of 1.052 and finished right where I expected. Guess I’ll use my jar for something I want esters in and go back to Cali or 05 for my normal brews.

The beer was within the recommended ranges for both temperature and alcohol, so I have no idea why it quit. And for some reason, I don't have any appropriate dry yeast in the fridge... for the first time in probably a year. Time to drive to the LHBS.
