I plan on ordering a few kits from Austin Homebrew, probably their discounted (15%) holiday beers. To keep things inexpensive, I may opt for the Danstar Nottingham dry yeast pack per kit instead of Wyeast smack packs.

Considering the cost-differential between smack packs and dry yeast, it makes cents to go with the dry yeast.

Will the dry yeast give off different / unique flavors over a Wyeast American ale yeast?

Do you foresee any issues using a dry yeast? I plan on making a starter ...

Nottingham is a pretty versatile yeast. If you keep fermentation towards the low end of the temperature scale you won't catch a lot of esters. Good all around yeast.

Gonna order from AHS tomorrow. Its gonna be my first all grain brew, gonna get the northwest cascadian dark ale kit and i'm going to use the notty yeast also to keep it as inexpensive as possible.

forrest, i'm gonna add the 1% boost bring the abv to about 7%, is one notty pack enough?

thanks

I used the new lot# in two 10 gallon batches, it goes like gangbusters, and drops out clear very well, Notty is always in my fridge and is one of my go-to yeasts, give it a try!

It will be fine. I know you will really enjoy the kit.

I've only used Notty so far (on 6th batch) and have had really good results. I like the flavors it gives personally.

At $1.50 per pack vs. $6.99 to $8.99, it is a much cheaper alternative. I may even go this route with a Rogue Dead Guy ale clone.

to the OP, i would urge you to get liquid yeast with at least one of the kits you order so you can see if you find any differences between them.

I would suggest basically the opposite. Brew a bunch of ales with Notty until you find a recipe and technique you are happy with. Then try your favorite recipe with a variety of yeasts. You won't know if it's the yeast or something else if you don't have a control group.

Notty is the only thing in my fridge, but I haven't gotten to the point above that I've mentioned. Notty is cheap and works well with all of the beers I like.
