Based on what I've been reading in all these "order yeast" threads, these guys don't bother ramping up production till they have X # orders. How hard would it be to keep yeast colonies ready to go? They either have a working starter or a pile of dried to start from. They just don't bother till it's going to make them a specific minimum amount.
 
Yeah, that's true. And I'm sure they've done the math. And for beer that's "fine". But for genuinely seasonal fermentation it's definitely an imperfect business model for the consumer.

The vault is probably a loss-leader/advertisement more than a profit generator. In my uninformed speculation.

I guess I should just buy 12 gal. of fresh pressed every December and put it in the freezer. Ideally I should ferment in February when the basement is cold!
