I've been doing some research on using honey in an English Brown Ale. I have heard some concern with using honey and how it will react with the yeast and make my beer really dry. I did find some sugar free honey called imitation honey at Wal-mart and thought about trying it. I am new to this craft so any help or suggestions would be appreciated. thanks:mug:

You could use some honey malt.

I'd stay away from the sugar free, imitation stuff - that just can't taste good or be good for your beer.

There is no point other than to perhaps experiment with flavour. Sugar = food for yeast = alcohol. There is no point.

I wouldn't.

I have used honey many times in many different proportions and have not had problems with dryness. Just throw in a few #s of honey. no worries.
