I've been inspired by a fruity tripel and a pineapple wheat I had recently, and I want to make a pineapple tripel. Anyone have any experience with pineapple? I'm not sure how much to use, and what form it should be in (juice or purée?).
Below is my proposed recipe without pineapple included:

12# Belgian pilsner malt
3# Belgian candi sugar (clear)

1 oz perle - 60 min
1 oz Saaz - 15 min

Belgian golden ale yeast

Thanks in advance!

If you're using pineapple, cut back on the sugar accordingly. The pineapple is going to contain mostly fructose and sucrose as its sugars, I think. Looks like pineapple is 10% sugar by weight: http://nutritiondata.self.com/facts/fruits-and-fruit-juices/2019/2 So if you one pound of pineapple chunks, you're adding mostly water, but also an ounce and a half of sugar. Juice has way more sugar per weight--about 44%: http://nutritiondata.self.com/facts/fruits-and-fruit-juices/2027/2 . So a liter of unsweetened juice has about 440g--that is, about a pound--of sugar.

I have no idea about quantities, but you can probably experiment. Ferment the beer most of the way, then add some pineapple and check the flavor after a week. If you feel like you need more, you can always add more.
