I would like to use Anti-foaming agent in the fermenter, but I have some questions: I usually use hops along with the yeast, right at the time of yeast pitching... is there any problem with that? Does it interfere with foam formation at the time of bottling... should I do priming? Does it interfere with the bitterness of the beer?

No.

Does it interfere with foam formation at the time of bottling
No. The yeast will break down the Fermcap.

... should I do priming?
If you're bottling and want carbonation, yes. Prime as you normally would.

Does it interfere with the bitterness of the beer?
AFAIK, it does not. The Fermcap should not precipitate the hop oils from solution.
