I've been on a graf and apple kick lately, and decided to play around a little and create an experimental small batch, and it turned out really well. This one tasted really promising as I took some gravity samples - will be bottling on Monday. If anyone has done anything similar or has notes, let me know. Cheers!

Amber/wheat/ honey Graf (1 gallon small batch, can easily be scaled up)

8oz Amber DME
8 oz Wheat DME
1.5 oz Honey malt
Yeast- Nottingham
Hops - Williamette - 7g (3.5 added at 45 mins, 3.5 at 20).
Apple juice - 1/2 gallon
Pectic enzyme - 1/2 tsp per gallon (optional, for extra clarity)

1-1.25 gallons of water, heated to 150*f. Honey malt is steeped in for 10 minutes. Bring to a boil, add DME and follow hop schedule:
3.5g @ 45 minutes, 3.5g @ 20 minutes, for a total 45 minute boil.
Cool wort down, and add 1/2 gallon of apple juice to carboy, then top off with wort to 1 gallon mark. Add pectic enzyme, then pitch yeast and let fermentation begin.

Pretty straight forward- I would've made 2 batches since I had enough for 2 1 gallon batches, but was out of carboys (always have something brewing). Tastes great, might use a little less wheat next time.
