Hey everybody im working on a recipe to do a simcoe/amarillo ipa.

I was just curious if I could use both of them at the same amounts in late adittion and dry hopping or that perhaps one of them is more pungent and I should cut back a bit on it?

I'm aiming for a nice and fruit but also dank ipa

I also would appreciate any feedback on the recipe

5 Gal batch
Low mash @ 148 90 min boil

12 lbs Pale Malt (2 Row)
8 oz Cara-Pils/Dextrine Grain
1 lb Caramel/Crystal Malt - 15L

Hop schedule
0.5oz CTZ bittering addition 60min
0.5oz Amarillo 20min
0.5oz Simcoe 20min
0.5oz Amarillo 10min
0.5oz Simcoe 10min
0.5oz Amarillo whirlspool
0.5oz Simcoe whirlpool

1oz Amarillo Dry Hop
1oz Simcoe Dry Hop
 
Dogfish Head IPAs use simcoe, Amarillo, and warrior in equal parts. You're definitely good to just use that 1:1 ratio, at least as a starting point!
 
yep, but I like to use just a hair more amarillo to simcoe. it's all personal taste. (60:40 ratio)
 
I am drinking a beer right now (well, not right now because it's like 6:45 AM, but you know what I mean........) and it uses simcoe and amarillo. That's one of my favorite combos!

But I do use a bit less simcoe than amarillo, since simcoe has a stronger flavor, sort of a piney cat pee (but in a good way). It's an 10 gallon batch, and the hop schedule is:
1.50 oz Magnum Leaf [16.40 %] - Boil 60.0 min
1.00 oz Amarillo [9.50 %] - Boil 15.0 min
0.50 oz Simcoe [11.90 %] - Boil 15.0 min
1.00 oz Amarillo [9.50 %] - Boil 5.0 min
0.50 oz Simcoe [12.00 %] - Boil 5.0 min
1.00 oz Amarillo [9.50 %] - Steep/Whirlpool 10.0 min
1.00 oz Simcoe [12.20 %] - Steep/Whirlpool 10.0 min H
2.00 oz Amarillo [9.50 %] - Dry Hop 5.0 Days
1.00 oz Simcoe [12.00 %] - Dry Hop 5.0 Days
 
"...piney cat pee. (but in a good way.)" OK. I would not use 'cat pee' to describe 'good'. But I respect Yooper as a seasoned brewer and source of accurate advice. So, I'll go with it as good. LOL.
 
I would say depends on your simcoe; smell it first. It can be more piney/dank or more tropical/fruity depending on the season and when it was harvested (late/early). In general through I think with 2:1 amarillo in the dry hop, it will be plenty dank. With 1:1 the simcoe might eclipse the amarillo's citrus aroma.
