When aging cider I understand that it is good to move it to a cooler temperature than what it fermented at. If I have various options at various temperatures - cellar (60ish), mudroom (50ish), garage (sub 50) - should I go with the coldest?

I'd say between 50 and 60. whichever will give you the most consist temps over your aging time.
