So I am using EC-1118 in an experimental Stout/Braggot.

It is fermenting happily but I have just realized that ec-1118 is a very aggressive yeast and am afraid if I prime it, it may create bottle bombs. I don't want to wait till the end of time for the ferment to complete either...so if I pasteurize... is there anyway to carb post pasteurization?

I'd be raising the temp of the beer to 160-170 degrees in a pot or two covered with foil to conserve the high ABV while the process is going on. Perhaps double boiler style?

If you are going to bottle carb, you cannot stop the yeast where you want. You need to let the brew ferment out fully or you risk bottle bombs.

If you try to stop the original yeast by raising the temp, it will stop that fermentation. If you add another yeast at bottling time fermentation will just start up again if there is any fermentable sugar left, guess what...... you will have bottle bombs if the original fermentation did not finish consuming the fermentable sugars.
 
+ 1 for beergolf's post. Either way you're messing with a tricky wicket.

I would bottle carbonate with the current yeast (assuming your braggot is done and slightly under estimate priming sugar) and do so in the much more pressure tolerant belgian style bottles.
 
Aggressive yeast don't create bottle bombs. Your cure for bottle bombs is sure to create them. Let it ferment out to until fg is stable then bottle. You need patience not pasteurization. Good luck!
 
I was under the impression that another yeast would die in the high alcohol environment and only live long enough to carb it up. I might as well be patient though! :eek:
 
Yeah I misunderstood your question. My suggestion would create bottle bombs. Why don't you want to wait until fermentation is complete before you bottle? Also what's your estimated abv?
 
Estimated abv around 12%

I was hoping to bottle within the next week or at max 2, but ec118 just keeps on trucking....forever!
