So I am using EC-1118 in an experimental Stout/Braggot.
It is fermenting happily but I have just realized that ec-1118 is a very aggressive yeast and am afraid if I prime it, it may create bottle bombs. I don't want to wait till the end of time for the ferment to complete either...so if I pasteurize... is there anyway to carb post pasteurization?
I'd be raising the temp of the beer to 160-170 degrees in a pot or two covered with foil to conserve the high ABV while the process is going on. Perhaps double boiler style?
