1066 beer turned 1086 when I boiled way too long. I should have topped off with water then but too many things going on hindered practical thought process, new baby etc. I had a pretty big starter stepped up once and fermentation is strong. I'm wondering seeing how I didn't add water pre-ferment is there a downfall to add water post-ferment? My fg is supposed to be 1016 but has yet to finish.

Boil it first to drive off the O2 and sanitize it, then add it once cooled. You'll probably still have a different beer than if you had added top off water pre-ferment, since it had a high gravity fermentation, which produces a little different character.
