I'd like to add a ball lock post to a plastic cap (similar to those on a Speidel plastic fermenter), like this:

and I want to be sure I'm getting the right thing. Will this "ball lock post with bulkhead assembly" do the trick?

Yes, those are what you are looking for.

I have a similar bulkhead to the one in your picture for a ball lock gas post in my plastic lid. It works great.
 
I did this to my fermonster lid and it works well. Make sure everything is stainless and get silicone washers or gaskets, you'll need one on both sides in the cap. I used a 1/2 inch bit and that worked well but a 7/16 would probably be better.

Looks great.

How did you fix the plastic dip tube?
How sturdy are the fermonster lids, stand the test of time? And how well does it keep pressure / what PSI do you go to?
